Blueberry French Toast Cobbler

1 loaf of French or Italian bread
5 eggs
½ cup milk
¼ teaspoon baking powder
1 teaspoon vanilla extract
½ cup sugar (use less if berries are sweet)
1 teaspoon cinnamon
1 teaspoon cornstarch
4 ½ cups (1 ½ pounds) blueberries
2 tablespoons butter, melted
Confectioners’ sugar

Slice bread into eight, ¾ inch-thick slices; arrange in a shallow baking pan.
In a medium bowl, whisk together eggs, milk, baking powder, and vanilla. Pour over bread, turning to coat evenly. Cover with plastic wrap and let stand 2 hours at room temperature or overnight in refrigerator.
Preheat oven to 450 degrees. Spray a 9X13 inch baking pan with nonstick cooking spray.
Mix sugar, cinnamon and cornstarch in a medium bowl; gently fold in blueberries until well coated. Spread blueberries in prepared pan; place egg-soaked bread, wettest side up, on berries, wedging slices in tightly. Brush tops of bread with butter and bake 20-25 minutes until toast is golden and berries are bubbling around edge of pan. To serve, place toast on plates; spoon blueberry sauce from bottom of pan over top and sprinkle with confectioners’ sugar.
